I have no dietary restrictions but am on a mission to eat healthier. Using roasted peppers is how I eat nachos now and even my son was surprised how much he liked it. It so does not feel like you are missing out!

You are making me hungry! I like the addition of some zucchini to bulk it out. FYI there’s a grain free tortilla chip that is recently on the market and it’s EXCELLENT – Siete brand – and available thru Vitacost etc if not at your local crunchy store. The lime flavor is bomb.

These nachos sound delicious!! Can not wait to try! What a great idea to use endive for some crunch. Have you tried Siete tortilla chips? They are grain, soy, dairy free. Pricey, but good. I may try mixing in a few with the endive.
We have and they’re super good! We find that Jules does well with higher ratios of vegetables so we go with this for meals, and save the chips for snacks.
Thanks for sharing. I’ve got Hashi’s as well and am moving into grain-free, but practice soy, egg, gluten and dairy free already. I love the peppers as chips. I’ve been subbing the Siete chips, but more veggies is even better. Great idea! Can’t wait to make them.
