I’m not a big “breakfast person”—usually, my first meal happens in the late morning. But when I do sit down to eat, I want it to feel special without being complicated.
Toast is the ultimate canvas for an elevated meal. Whether you’re pairing it with a protein smoothie or enjoying a quiet moment with a glass of water, these three recipes are on heavy rotation in our house. They are simple, fast, and feel much more sophisticated than your average buttered slice.

1. Elevated Avocado Toast with Pea Shoots
The classic, amped up with fresh greens and a citrus zing.
Ingredients:
- Bread: Your choice (sourdough or grain-free works best), toasted
- Base: 1 large avocado, mashed
- Seasoning: 1 tbsp lime juice, 1 tsp Hey Old Sport Overachiever (or ½ tsp salt, ½ tsp black pepper), ½ tsp garlic powder
- Toppings: Alfalfa sprouts, toasted sesame seeds, and pea shoots
Instructions:
- In a small bowl, mix the mashed avocado with lime juice and dry seasonings.
- Spread generously over the toast.
- Top with a handful of alfalfa sprouts, a sprinkle of sesame seeds, and pea shoots.
- Pro-tip: Finish with one last light squeeze of lime for extra brightness.
2. Spicy Mushroom & Fried Egg Toast
A savory, umami-packed option for those who love a bit of heat.
Ingredients:
- Bread: Toasted and drizzled with olive oil
- Protein: 4 eggs
- Veggie: 2 cups mushrooms, sliced
- Aromatics: 2 tbsp olive oil, 1–2 sprigs fresh rosemary
- Heat: 5–10 drops smoked Tabasco sauce, red chili flakes
- Seasoning: Salt and black pepper
Instructions:
- Sauté the Mushrooms: Heat a pan to medium, add 2 tbsp olive oil and the rosemary. Fry the rosemary for 1 minute to infuse the oil, then add mushrooms. Sauté until golden. Season with salt and pepper, then set aside (discard the rosemary).
- Fry the Eggs: Add another tbsp of oil to the pan. Fry your eggs to your preferred doneness (we recommend over-easy for a runny yolk).
- Assemble: Place the egg on the oiled toast, add a few drops of smoked Tabasco, pile on the mushrooms, and finish with a pinch of red chili flakes.
3. Whipped Goat Cheese & Honey Toast
The perfect balance of creamy, sweet, and peppery.
Ingredients:
- Bread: Thick-cut toasted bread
- The Spread: ¼ cup chèvre (goat cheese), ¼ cup cream cheese, 1 tsp honey
- Toppings: Arugula, pink peppercorns, and an extra drizzle of honey
Instructions:
Finish: Sprinkle with crushed pink peppercorns (for a floral heat), top with fresh arugula, and drizzle with extra honey.
The Spread: In a small bowl, whip together the goat cheese, cream cheese, and honey until smooth.
Assemble: Spread the mixture thick over your toast.


Avocado Toast
Ingredients:
- Bread of your choice toasted
- 1 large avocado mashed
- 1 lime
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- alfalfa sprouts
- toasted sesame seeds
- pea shoots
Directions:
- Mix together the mashed avocado, 1 tbsp lime juice, salt, pepper, and garlic powder.
- Spread the avocado on your toast, top with alfalfa sprouts, sesame seeds, pea shoots, and a light squeeze of lime juice if you like to finish.

Spicy Mushroom & Egg Toast
Ingredients:
- Bread of your choice toasted
- 4 eggs
- 2 cups mushrooms
- 3 tbsp olive oil plus a little for drizzling
- 1-2 sprigs fresh rosemary
- salt
- black pepper
- 5-10 drops smoked Tobasco sauce
- red chili flakes
Directions:
- Heat a pan on medium heat, then add 2 tbsp of olive oil and the rosemary. Fry the rosemary for 1 minute, then add the mushrooms and sauté. Season with a pinch each of salt and pepper. Remove from the pan and set aside (discard the rosemary).
- Add another tbsp of olive oil to the pan on medium heat. Add your egg, season with salt and pepper, cover, and cook until desired doneness reached.
- Drizzle your toast with a little olive oil. Add the fried egg, followed by a few drops of smoked Tobasco, then the mushrooms, finishing with the chili flake.

Goat Cheese & Honey Toast
Ingredients:
- Bread of your choice toasted
- 1/4 cup chevré
- 1/4 cup cream cheese
- 1 tsp honey plus more for drizzling
- pink peppercorns
- arugula
Directions:
- In a bowl mix together the goat cheese (chevré), cream cheese, and honey until smooth.
- Spread the goat cheese mix over your toast. Sprinkle with a few pinches of pink peppercorns, top with arugula, and drizzle with a little more honey to finish.
