Last week on Instagram, I mentioned how I thought it was important that everyone have a handful of side dishes that took 5 minutes and only a handful of ingredients to throw together, and required no cooking. Things that could just be thrown together at a moment’s notice. I also mentioned that I have about 8 or so that I cycle through, so there were a few requests to share those.

Well, here are three (can’t give away the farm all at once!). The thing that makes these dishes so delicious is they focus on fresh fruits and vegetables, paired with their natural bffs, seasoned and dressed minimally. They present like special dishes, taste like special dishes, but prepare faster than you can imagine.

Grid Cloth Napkins | Chambray Serving Platter

Heirloom Tomatoes & Arugula

This is an easy dish made up of ripe, sliced tomatoes paired with peppery greens. So much flavor, and easy to make.
Servings: 4

Ingredients

  • 1 package arugula
  • 2 cups additional tender greens clover spouts, alfalfa sprouts, pea shoots, dandelion greens, spring mix etc.
  • 2 heirloom tomatoes washed, sliced
  • 1 cup peppery microgreens radish, mustard, broccoli sprouts
  • aged balsamic vinegar
  • robust/peppery extra virgin olive oil
  • flake salt
  • fresh cracked black pepper

Instructions

  • On a platter, spread out the arugula and tender greens. Top with sliced tomatoes, then sprinkle the peppery microgreens on top. Hit with a drizzle of balsamic, olive oil, then a sprinkle of flake salt and fresh cracked black pepper. Serve immediately.

Watermelon with Orange, Coconut & Mint

Fresh, unexpected flavor in a combination most people have never had. So tasty and super simple.
Servings: 8

Ingredients

  • 1/2 large watermelon rind cut off, diced into small cubes
  • 1 cara cara orange zested and juiced
  • 2 tbsp vanilla coconut yogurt I prefer CocoYo brand
  • 1 tbsp honey
  • 5-6 leaves mint chopped
  • flake salt optional

Instructions

  • In a bowl, whisk together the cara cara zest, juice, vanilla yogurt, and honey. Add the watermelon and mint to the bowl and gently toss together until evenly dressed. A pinch or two of flake salt is optional, but encouraged (it's really good).

Thai-Inspired Cucumber Salad

Spicy, full of flavor and so fresh. This is an incredible side for grilled meats, fish, or alongside a big bowl of rice.
Servings: 6

Ingredients

  • 2 hot house cucumbers cut into non-uniform bite sized pieces
  • 1-2 Thai chili thinly sliced
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1/4 cup coconut sugar
  • 1/4 cup cilantro chopped
  • 1/4 cup peanuts optional

Instructions

  • In a bowl, whisk together the Thai chilis, fish sauce, lime juice and coconut sugar. Add the cucumbers, cilantro and peanuts, toss to coat and serve immediately.
