Traditional American breakfast is a bit sticky for me. On the one hand, I love me some bacon, eggs, hash browns, and pancakes. Other the other hand, feeling like you need a nap at 10am isn’t the best way to stay productive through your day.

I’ve found that, if I’m going to eat breakfast, small portions, low carbs and fresh flavors keep me satisfied for hours without making me feel sluggish. This breakfast is a favorite in our home. A big focus on fresh ingredients and flavors, good protein and salty pancetta. With the right technique, you don’t need a lot of fuss in order to create an amazingly satisfying breakfast, in less than 20 minutes.

Eggs & Asparagus

Servings: 4 adults

Ingredients

  • 5-6 eggs
  • 1 bunch asparagus
  • 1 cup diced pancetta about 5oz
  • 1/4 tsp lemon zest
  • lemon juice just a squeeze
  • sea salt
  • pepper

Instructions

  • Bring a pot of water to boil. Add the eggs and boil for 5 minutes (you only need 4 eggs, but it's good to boil a couple extra just in case one cracks while cooking).
  • Cut the bunch of asparagus about 3 inches from the top. Reserve the lower part for another use. Optional: using a vegetable peeler, peel the skin from the bottom inch or so of the aspargus tops.
  • After the eggs have boiled 5 minutes, remove them from the boiling water and place in a bowl. Run under cold water for 2-3 minutes. Peel the eggs and set aside.
  • In the same water the eggs were boiled in, boil the asparagus for two minutes, then remove and place in a bowl of ice water for another 2 minutes. Pat dry with paper towel and set aside.
  • In a ceramic nonstick pan, cook the pancetta over medium low heat until fat is rendered and the pancetta has started to brown and crisp up. Add the asparagus, season with black pepper (no salt is needed - pancetta is very salty), add the lemon zest and toss. Cook together for 2 minutes.
  • To serve, divide the asparagus and pancetta evenly among 4 plates. Place an egg on top of each, cut in half, and season with salt and pepper. Finish with a few drops of fresh lemon juice over each plate. Enjoy!

    Looks so good! We love doing asparagus with sweet potatoes and eggs in our house! But less carbs for better mind function in the morning is usually a good idea!!

    Hi chris and Julia! You’re speaking my language. This is something I do on the regułar with crumbled bacon, but pancetta brings it up a notch for sure. Have you ever added a drizzle of hollandaise sauce along with a piece of toast? I’m sure you have! ;)) Have a beautiful day.

      Jules can’t have dairy (hollandaise has butter) or gluten (toast), so we go a little more simple. But hollandaise over a runny egg is one of my absolute favorite combinations. So good!
