After shaving the asparagus, soak it in ice water for 5-10 minutes. Remove and let drain for another 5 minutes before cooking.
In a bowl, whisk together the ginger, mustard, vinegar, soy sauce, veganaise (mayo), honey, and salt. Adjust seasonings as desired, and set aside.
Heat a sauté pan on medium heat. Add the olive oil and sesame oil, then immediately add the asparagus. Toss and sauté for about a minute, then add the garlic and a pinch of salt. Sauté another minute.
Remove from the heat and add about half the dressing. Toss to coat, add more dressing as desired. Top with toasted sesame seeds and serve warm.
