5-Minute Side - Carrot Slaw with Honey & Dill

A crunchy, tangy, fresh slaw that goes well with just about any grilled meat or fish. Comes together in 5 minutes with ingredients you probably already have.

Ingredients

  • 15 oz shredded carrots about 1 1/2 bags
  • 1 small shallot thinly sliced
  • 2 tbsp fresh dill chopped

For the dressing

  • 1/4 cup veganaise or mayonaise
  • 1 1/2 tbsp lemon juice fresh squeezed
  • 2-3 tsp dill pickle brine Grillo's Pickles are my preferred
  • 2 tbsp honey
  • tt salt and pepper

Instructions

  • In a bowl, whisk together the dressing ingredients. Thinly slice the shallots and chop the dill. Toss the carrots, shallots, dill, and dressing together in a bowl and serve immediately or let chill in the fridge until time to serve. Stays crunchy for up to a couple days.
