In a bowl combine all of the ingredients and mix by hand until combined evenly, taking care not to overmix the pork.
Form into 25-30 even-sized patties. Place on a ceramic nonstick baking sheet in the oven for 15-20 minutes, when fully cooked through but before significant browning.
Store in the fridge (up to 10 days) or freezer (up to 3 months). Heat in microwave or in a pan on the stove before eating.
