Resort Green Juice Copycat Recipe

I developed this juice after a trip we took to Mexico where I couldn't get enough of the green juice. I've lowered the sugar level on mine but it can easily be sweetened with a touch of honey or by adjusting the coconut water.

  • Add the melon, apples, lemon, and cucumber to a high power blender and blend until a loose juice forms. Add the spinach and blend until incorporated. Add the coconut water and blend on high until uniform.
  • Pass the mix through a fine-mesh strainer or cheesecloth into a pitcher or large bowl. For a juice with more pulp, use the back of a spoon to push the juice through the strainer. For less pulp, allow the juice to sit and strain slowly. use a spoon to scoop away the pulp that has settled in the strainer from time to time.
  • Put the juice in a pitcher in the fridge to chill, or serve immediately with ice. Adjust the sweetness by adding more coconut water (if too sweet) or a little honey (if not sweet enough).
