Nicoise-Inspired Tuna Salad

Nicoise is a classic French salad with tuna, olives, tomatoes, eggs, and quite a few other things. It's so tasty but also takes a bit of prep. This tuna salad borrows those flavors, using the simplest of the classic ingredients. This one is my personal favorite.

Ingredients

9oz canned tuna drained
8 cherry tomatoes cut in half or quarters
1/4 cup finely chopped shallots
1/4 cup roughly chopped kalamata or nicoise olives
2 tbsp finely diced radish optional
2 eggs hard boiled, peeled, diced
salt & pepper to taste

For the dressing

4 tbsp veganaise I use Follow Your Heart brand
2 1/2 tbsp dijon mustard
2 tbsp lemon juice
1/2 tsp lemon zest
1 1/2 tbsp champagne vinegar
1 1/4 tsp fresh thyme finely chopped

Instructions

In a bowl, whisk together the dressing ingredients until uniform. Season with a pinch of salt and pepper. Add the remaining salad ingredients and combine with a spatula until everything is evenly coated. Be gentle for a rougher texture, and more aggressive for a smoother texture. Season with salt and pepper to taste.
