Ingredients
15ozshredded carrotsabout 1 1/2 bags
1smallshallotthinly sliced
2tbspfresh dillchopped
For the dressing
1/4cupveganaise or mayonaise
1 1/2tbsplemon juicefresh squeezed
2-3tspdill pickle brineGrillo's Pickles are my preferred
2tbsphoney
ttsalt and pepper
Instructions
In a bowl, whisk together the dressing ingredients. Thinly slice the shallots and chop the dill. Toss the carrots, shallots, dill, and dressing together in a bowl and serve immediately or let chill in the fridge until time to serve. Stays crunchy for up to a couple days.
