Stir-fry Shaved Asparagus

This Asian-inspired dish is a great lunch, side dish, or could even be a great substitute for noodles.

Ingredients

  • 1 bunch asparagus shaved or sliced thinly
  • 2 tbsp olive oil
  • 1 tsp sesame oil
  • 1 tbsp garlic finely chopped
  • 2 tsp ginger grated
  • 1 tbsp coarse mustard
  • 1 tbsp sherry vinegar
  • 1 tbsp soy sauce
  • 2 tbsp veganaise or mayonaise
  • 1 tbsp honey
  • salt to taste
  • 1 tsp sesame seeds toasted

Instructions

  • After shaving the asparagus, soak it in ice water for 5-10 minutes. Remove and let drain for another 5 minutes before cooking.
  • In a bowl, whisk together the ginger, mustard, vinegar, soy sauce, veganaise (mayo), honey, and salt. Adjust seasonings as desired, and set aside.
  • Heat a sauté pan on medium heat. Add the olive oil and sesame oil, then immediately add the asparagus. Toss and sauté for about a minute, then add the garlic and a pinch of salt. Sauté another minute.
  • Remove from the heat and add about half the dressing. Toss to coat, add more dressing as desired. Top with toasted sesame seeds and serve warm.
