You wanna know why grilled peaches are so awesome? Because they meet the following criteria:

Of course, I like to complicate my grilled peaches a little more than I do my grilled corn by soaking them in a cinnamon syrup for at least 30 minutes before grilling. Here’s what you need:
2-4 Peaches, cut in half, pit removed
1 cup water
1/2 cup sugar
2 tsp cinnamon (yes, I realize that’s kind of a “Fall” flavor, but the combo is too perfect to care)
Vanilla Bean or Caramel Swirl Ice Cream
Have you ever heard of simple syrup? If you watch food shows, you probably have. If you’ve never made it, the name really suits it. It’s equal parts water and sugar. So, 1 cup of water to 1 cup of sugar, boom, done. I’ve tried making my peaches with a full on simple syrup and it came out too sweet for my taste, so I cut the sugar in half and it’s perfect. All you do is mix the water, sugar and cinnamon in a bowl, put your peaches in a ziplock bag, and pour in the syrup. Close the bag and try to get as much air out as you can. Put the bag in the fridge and let the peaches soak for at least 30 minutes.
Grill the peaches. You can use a grill pan for this and it turns out great. Don’t add any oil to the peach before grilling, they shouldn’t stick. But if you have a new grill that hasn’t been used much, you may want to spray some cooking spray on the grate. Cook for 3-4 minutes on each side and serve with ice cream. I typically prefer vanilla bean with desserts, but I found that a good caramel swirl goes well with peaches and cinnamon. Scoop your ice cream into the bowl first, and take your peaches straight from the grill into the bowl. Doing this will melt part of the ice cream, which creates a wider range of consistencies and temperatures that is really pleasant to eat. Finished product:
Grilled peaches are a total trophy dish, and take such little preparation. In-laws stop by unannounced? You can have this ready in 45 minutes and they’ll be singing your praises, guaranteed. Or just bring a giant bag of peaches soaking in syrup to your next cook out, borrow the grill after dinner and blow everyone away. No matter when you serve it, it’ll be a hit, and you will be too.
