While working as a quasi-bartender, people often asked what I’d recommend. Of course I always needed more information. If someone just came from the gym, I wasn’t about to pour them a hot chocolate. But any time someone told me they were in the mood for something fresh, my recommendation was always the same – the Apple Eye. It was our version of a drink called Apple of My Eye, which is made with black currant syrup. Our version is made with boysenberry jam.

Before getting started, I’d suggest getting a cocktail shaker. As mentioned before, I don’t drink, but I’ve used mine so many times that it was definitely a justifiable purchase. It allows you to mix all of your ingredients evenly and serve a drink ice cold, without any ice in it (you put ice in the shaker, shake it up, and the little holes on the top keep the ice in). Here’s an action shot of me making this drink:

Look at that form. Perfection. (sarcasm – not sure there is a proper form for this. just shake). Here are the ingredients:

1 cup of ice
1 cup apple juice
2 Tbsp cream
2 Tbsp boysenberry jam

Put everything in your cocktail shaker, shake it up, then pour in a glass:

At the bar we served it with a dash of cinnamon, but I actually prefer it without. Despite the cream, this drink is so light and refreshing. Perfect for an early afternoon lunch with friends or a picnic. It only takes 30 seconds to make and I’m confident you and anyone you make it for will immediately love it.
