What I’m Makin’ This Week 10.15-10.21

I’m back to share what I’m making this week.  My first week cooking went great and it was fun to try new recipes.  Some of them were fantastic, but I probably wouldn’t make the garlic-parmesan edamame again–turns out we prefer just plain edamame with sea salt sprinkled on top.  It’s clean on the palette and hands.  

Here’s the rundown of what’s for dinner at our house this week with the linked recipes:

Turkey Chili + Cornbread (This is the only thing I really make regularly)
Penne Spaghetti Squash with Chicken Thighs  (I am subbing out the penne for healthier spaghetti squash)
Spinach and Feta Quesadillas + Grilled Chicken
Tomato Basil Soup + Grilled Cheese
Cinnamon-Roasted Sweet Potato & Apple Salad with Caramel Vinaigrette Chicken
Pizza + Salad (another regular around here.  We love this recipe for crust)

    Good to know about the edamame, I was going to try it this week. Since you’re making turkey chili, might I suggest this recipe? I tried it last week and it was delish. Make sure you spice it up and add the extras mentioned in the 1st and 2nd reviews.
