As a home cook, there are several little things you can do that will make a big impact on your food. If I had to pick my top 3 small things that make a big difference, they would be (in no particular order):

1- Use a meat thermometer to not only safeguard against serving someone raw chicken, but also to avoid serving them a dried out piece of meat. Temperature control on meat is key to delicious proteins.
2- Replace your iodized table salt with kosher salt. We keep iodized salt for baking, but outside of that I can’t stand it anymore. I think some people are under the illusion that kosher salt is expensive. It’s not. You will notice an immediate difference in the flavor of your food. Just taste the two salts by themselves if you need more convincing.
3- Always use fresh ground pepper. I can’t think of any food item that you would put pepper on where the flavor would not be significantly enhanced by using freshly ground pepper instead of the pre-ground, stale-as-all-get-out, flavorless pepper that fails at seasoning your food but succeeds at making you sneeze uncontrollably. I have never purchased pre-ground pepper and I don’t plan to.

The first two I encourage you all to take the initiative on. If you don’t have a meat thermometer, you can buy them at Walmart or Ross for maybe $5, and you can find kosher salt at any grocery store (where you find the baking stuff like flour and what have you) where a big box of it costs maybe $2.00. As for the third, well, maybe we can help you with that… with this month’s Ikea as-is giveaway! (applause)

  4. Ewww. Once I decided I was going to make a Salmon and Potato Soup…easy enough, right? Wrong! I worked really hard cutting the fish and doing everything just perfectly! It cooked down to a nasty, mushy mess! On top of that I accidentally let it boil which caused the milk to curdle! Yuck! Lol! It smelled so bad we had to open the windows! Anytime I ever mention cooking fish my family quickly thinks of something else they want for supper!!

  7. The worst thing I ever made was a black bean soup. It tasted like chalk. I think that is the only meal I have ever just thrown away without any attempt to fix it because it was so nasty.

  8. I remember making a birthday cake for my 2 year old daughter at the time (now 16). It was a nut spice something…all I remember it was horribly dry and nobody seemed to be eating it…even my daughter….thank goodness for Icecream!!!

  11. I seriously made a raw turkey for Easter one year! I thought Hubster turned the oven on during preps I thought he did, you know the drill we ended up having hamburgers for our Easter Dinner! LOL, wasn’t funny then but it is now!

    My daughter absolutely loves red beans and rice. Loves it. I mean, she would eat it every day of the year if I would let her. Lol. Welll, I accidentally bought red beans with jalapenos in it one time and thought no one would notice. Oops, I was wrong. It was terrible. We aren’t a spicy people so it made a big difference. Unfortunately that is not the worst or only bad experience I have had in the kitchen in my 15 years of being a mom/married. I have made some doozies in my day.

    Wow..there were so many- The time i was suppose to cook a Colombian dish for my son’s class-First I made a dish from Brazil. i didn’t know you had to soak beans, so the beans were as hard as rocks, the rice was cold and then he went to serve the plantains for dessert. I thought the kids could eat them like bananas, duh…you have to cook them first.

    I tried cooking this casserole that my mom makes, but only using fat free products (think ff milk, butter, cottage cheese, shredded cheese, etc) GROSS!!!! It was so revolting and my mom’s version is totally worth the fat (she uses low-fat dairy products instead of full fat, but never fatfree)!

    Ha-I was cooking a special dinner for my father :) It was fried chicken. It was the most beautiful color of golden brown on the outside…but when my dad bit into it…it was raw. I was only about 16, so I guess it was a normal mistake when you first cook chicken legs :)

    I’ve had a few bad experiences but the one that stands out was my first experience at cooking an entire dinner. I was 16 and my parents had to take my brother to the doctor so I said I would make dinner. I love onions and added them to everything!! Too many onions make a nasty meal.

    I’ve made some pretty bad meals. But one of the worst was when I made mexican tortilla soup, and I thought the recipe called for one chili in poblano sauce. It turned out it called for 1 teaspoon of chopped chili in poblano sauce, and it was inedible because it was way too spicy.

  43. I tried a recipe for a scrumptious looking swiss steak. I followed the directions perfectly including timing in the oven. When I opened the dish mine was nothing like the picture … instead it was dark, shriveled and no scrumptiousness anywhere! I think it’s the one thing my hubby hasn’t been able to finish!

  48. One time I let my son convince me to douse some chicken breasts with Dave’s Insanity sauce and broil them in the oven. We had to open all the doors and windows in the middle of a snowstorm and sit in the garage with the dogs until the noxious fumes aired out of the house!

    Chicken breasts. Plain and simple with a nice marinade, along with a side salad, veggies, and wine. I served it to a group of people and everyone cut in at the same time and saw the raw center. OOPS!!!!

    When I was making spaghetti & the top of the salt shaker came off & it all dumped into my sauce. I tried scooping it out, adding sugar etc. We just got married & my hubby tried eating it but there was no way. I think we ended up with garlic butter noodles that night. Thanks

    The worst dish I ever made was homemade weight watcher’s onion rings. The recipe said to dip them in eggs and then coat them in bread crumbs. The eggs didn’t really stick to the onions, and the panko bread crumbs barely stuck at all. I decided to just put them on the cookie sheet and pour some chicken breader over them before I put them in the oven. I came out with burned onions coated in chicken breading powder. Ugh, it was horrible! But my fiance is such a trooper he actually ate some! lol

    Hmm.. I am proud to say I haven’t made anything unedible since I just recently started cooking.. but baking, I used too much oil instead of butter for chocolate chip cookies and the dough was so greasy it wouldn’t stay together. I had to soak some of it up with several paper towels. Ugh ew! Now my husband just the other night used garlic salt instead of garlic powder.. I swear I am still retaining water from the salt intake! Those 2 stand out because I despise grease and salt and won’t eat anything too greasy or salty.

I mean, who wouldn’t think that Nachos and tomato soup goes well together. Creed still reminds me how disgusting it is to this day. It makes me laugh still that I thought that was a good dinner trying to be a good wife. Oh wow. The memories.     The worst meal that I have ever cooked was a roast with vegetables.
    I had been cooking it in the pressure cooker.
    And was getting things ready as it didn’t have too much longer. When the weight flew off as I walked by the stove and all of the contents started blowing out of the top of the pot.
    Needless to say dinner was ruined and I had to repaint the ceiling and walls in my kitchen.
    As I walked through the livingroom to tell my guest that we would be going out I had vegetables, beef and broth sitting on top of my head and hanging in my hair.
    I was mortified lol.

They were watery, looked like throw-up, and the recipe called for way, way, waaaay too much sage. Horror. Pure horror. Even my hubby couldn’t eat it and he will eat anything.     When we first married, I didn’t know anything about cooking. I offered to cook dinner for my husband one night and pulled out a box of Hamburger Helper. I asked him how to prepare it and he said, “Just follow the directions on the box.

    I had a big problem. The first step said “Brown 1 lb. of ground beef.” I was in trouble. When my husband came back in to check on me, I was sitting at the table crying. When he asked what was wrong, I asked, “How do you brown ground beef?”

    I’m happy to say that my cooking has come a LONG way from that evening over 20 years ago!

    I remember when I was first married ,we invited a friend over for dinner. I wanted to impress my new husband that I could cook and bake and made homemade dinner rolls. Well I placed them on the table and low and behold our guest nearly broke his tooth.     Hard to single out just one, there have been so many; the un-cuttable smothered steak (not even ginsu knives could penetrate), the cookies made with salt instead of sugar, the chili that caught on fire (it was hot but not that hot), the sauteed shrimp with the shells still on…it’s a hall of shame for sure. The most recent disaster is the so-called orange chicken I made this week using a recipe from the Food Network -it was raw at first so I turned up the oven. Then it became dry and completely tasteless. Even my very kind and supportive husband couldn’t finish his.

    The worst thing I made was a lemon meringue pie. My husband loves lemon meringue pie & I wanted to impress him. The meringue top was a mess. It would not hold up & dripped all over the place. I’ve never attempted to make it again. :(

  104. I can’t think of the worst meal I ever cooked(I guess I blocked it our of my memory, lol) I will say I tried to make a pumpkin pie a couple months ago and cheat using the pumpkin pie spice instead of all the different spices and I didn’t add enough and it was like tasteless mush. :-P yuck.

  105. Hmm the worst meal I ever made was when I cooked 2 roasting chickens and fell asleep and no one else was home and they looked worse than the Griswald’s family turkey, so dried out and burned on the outside. I have never lived it down. Jake765 at aol dot com

    The worst dish I have ever cooked was my first time trying to make pad thai. I added too much of tamarind paste that it turned out super sour like eating noodles with lime juice. We had to throw the entire pot of pad thai away.

    When I was first learning to cook I was making lasagna but I wanted to add mushrooms to it. We had fresh ones so i just sliced them up and layered them in the lasagna without sauteeing them first. It was a disaster because they didn’t cook all the way and made the whole thing watery.

    worst was definitely the beef stroganoff I attempted as a newlywed. who would make this anyway? even when it is done properly its not all that yummy, right!?! bad flavor, tough beef…. total disaster. hubs ate it anyway, but i couldn’t do it. not worth the calories :)

    I had to make a breakfast casserole for a church brunch. I prepared it the night before in a slow-cooker, specifically following the directions. Well, being a new recipe, I probably should have tried it out before I served it in public, cause in the morning,the sides were crusty and burned, and the middle was soggy. And I had no time to prepare anything else!

    I tried to make Chicken Cordon Bleu. I’d never made it, nor eaten it – so I had NO idea what it was supposed to look like outside of the recipe. It was an ultimate disaster.     Not too long after I started dated the man who would become my husband, I was apartment sitting for a friend and decided to cook him a meal. I found a great chicken recipe but had no idea that different cuts of chicken cook for different lengths of time. I took a boneless breast recipe and tried to duplicate it with regular breasts. I served him raw chicken.

  119. I had the drunky-munchies one night and got the bright idea to make pasta. I thought it would be yummy to toss it with salmon, but I didn’t have any salmon on hand so I tossed the pasta with some canned salmon. It looked awful and was too dry so I decided to make a sauce too. The fish made me think “Asian” and I tossed in soy sauce, sesame seeds, red pepper flakes, oyster sauce, sriracha, and rice wine vinegar. Um, yeah. It looked horrible and tasted worse. In case anyone is wondering, it isn’t a good idea to start cooking your meal after you’ve consumed a bottle of wine. This horror stands out as the only meal that I’ve prepared that my husband refused to eat.

  120. I agree with the meatloaf. It was one of the worst meals I have ever made too! I made it up with all the “correct” ingredients and put it in a small crockpot with foil under it. Bad idea! The crockpot was way too small so the grease had nowhere to go! I checked it a couple hours later and it was a greasy gross mess that didn’t look like it was ever going to cook thru. Needless to say that meatloaf got thrown away.

    The worst meal I ever made would have to be stir fry with tofu. I’m not much of a tofu fan, but in 4-H, many years ago, I had to use it in one of the recipes. It was the nastiest stir fry I’ve ever made and I love to make stir frys.

  122. The worst meal I ever made was meatloaf about 3 weeks into our marriage. I think I bought 2.5 lbs of ground meat, mixed it according to the recipe with breadcrumbs, eggs, ketchup, Lipton Soup mix, I had all the ingredients. I just didn’t have a loaf pan. I put this huge lopsided mass of meet on a cookie sheet, hiked the temperature up, and hoped for the best. It expanded all the way to both sides by the time it was done. I don’t remember what I served with it, all I remember was that it was so overwhelming to put it on the table between us, and Rory said after trying to hoarf it down “…Do we have any ketchup” I started to cry because I used the last bit in the recipe. No ketchup, no gravy. Just us and the meat monster in the middle.

    Now I can continue with kitchen horror stories, like the time I never turned on the crock pot…..

  123. One time I was making Chili for my roommates and I ran out of chili powder so I thought I’d substitute a little cayenne pepper instead. I didn’t use the full amount but it turns out that a little bit of cayenne pepper goes a LONG way. My roommates were dying as their mouths burned. We loaded it with sour cream and cheese and even the corn bread I had prepared to go with it and it was still almost too hot to eat. To this day when I speak to them they won’t let me live it down.

    Butternut squash macarroni and cheese.

    I made it right after we moved to Rexburg. We were newly married, in our first apartment, and it was one of the first “big girl” recipes I tried. It took me hooooours to prepare.

    Ry and I took our first bite. He kept eating. I started crying. “It’s horrible…” he goes, yaaa it is pretty gross. It made me cry even more because he WAS eating it, just to make me happy. We went to Quiznos instead. After that day, I only make familiar things…no weird ingredients. YUCK. It was GROOOOSS!!!!
